I just finished making a fabulous meal and I want to share it with you!
Two of my favorite foods are peanut butter and pasta. I wanted to figure out a way that I could enjoy both without feeling the guilt of eating a plate full of carbs and fat.
The answer I came up with was to make a veggie stir-fry…add in whole wheat pasta…and mix it all up with a yummy peanut sauce.
The ingredients:
- 4 tbsp all natural peanut butter (I used creamy but you can easily substitute crunchy)
- 4 tbsp low sodium soy sauce
- 2 tbsp worcestershire sauce
- 2 tbsp garlic, minced
- 1 tsp ginger, chopped
- juice of 4 clementine oranges
I wanted the sauce to have a nice balance of salty and sweet. Once I spotted the bag of clementine oranges that I recently bought, I knew that they would work perfectly!
I stir-fried some veggies in olive oil, cooked the whole wheat pasta, and combined the two. Then I added the peanut sauce. I found that the sauce was a bit on the thick side, so I added a ladle of the pasta water that I just boiled my pasta in. It did the trick. Smooth, sweet, and delicious!
